Tartaletė su kriaušėmis / Tartlets with almond cream and pears

Jau kelias dienas man norisi kažko, kas būtų paprasta, bet tuo pačiu labai skanu. Mintyse vis šmėžavo gardūs, traškūs kruasanai, bet laiko juos gaminti tikrai neradau, tada prisiminiau šias tartaletes. Prancūziška klasika, kuri niekada nenuvils. 

Be galo skanus migdolų kremas, švelniai prie jo derančios kriaušės buvo tai, ko man reikėjo.
Šį kartą naudojau konservuotas kriaušes, bet šiam receptui jas galite lengvai pasigaminti pagal šį receptą

For few days now I was dreaming about something simple but yet delicious. 
All I could dream of was some fresh, buttery croissants but unfortunatelly I didn't have enough time to make them.
So I remembered these tartlets. French classic that will never let you down.
Delicious almond cream and delicate pears was a perfect match that I needed. 
This time I used pears in syrup that I made myself but you can use this recipe to make them.

Tartaletės pagrindui

150 g sviesto, kambario temperatūros
90 g cukraus pudros
30 g maltų migdolų
1 kiaušinio
2 g druskos
250 g miltų

Kambario temperatūros sviestą išsukite iki purumo kartu su cukrumi ir maltais migdolais.
Įmaišykite kiaušinį.
Druską sumaišykite su miltais. Suberkite pamažu juos į tešlą. 
Suformuokite rutuliuką, įvyniokite į maistinę plėvelę ir palikite šaldytuve 2 - 3 valandas, kol sustings.

Iškočiokite tarp dviejų kepimo popieriaus lapų apskritimus, didesnius nei 10 cm skersmens formelės. Įneškite į jas, švelniai paspauskite dugną pagal krašintes, kad tešla tinkamai priglustų prie sienelių.
Subadykite šakute dugną ir dėkite į šaldiklį 1 - 2 valandoms, kad gerai sustingtų.

Įkaitinkite orkaitę iki 170°C.
Kepkite tartaletes 15 minučių.

Migdolų kremas

100 g sviesto, kambario temperatūros
100 g cukraus
100 g migdolų miltų
2 kaušinių
8 g romo

Į kombaino indą suberkite cukrų, migdolų miltus ir gabaliukais supjaustytą sviestą, maišykite su "K" antgaliu, kol viskas susijungs. Sudėkite kiaušinius ir supilkite romą. Išmaišykite.
Paskleiskite ant pusiau iškeptų tartalečių, užpildydami 3/4 jų tūrio.
Supjaustykite plonais griežinėliais kriaušes ir atsargiai jas praplėskite. Uždėkite ant migdolų kremo.
Kepkite dar apie 20-30 minučių arba kol migdolų kremas įgaus gražią rusvą spalvą.

Tartlets with almond cream and pears 


For the sweet shortcrust

150 g butter at room temperature
90 g powdered sugar
30 g almond flour
1 egg
2 g salt
250 g flour

Beat butter, almond flour and powdered sugar until soft and pale.
Add egg and incorporate it well.
Add salt to flour and add this mixture to butter. 
Don't overmix. 
Wrap the dough in a plastic cling and leave in the fridge for 2-3 hours.

Roll out between two baking sheets to a thin circle. Cut out bigger circles than your baking tins and bring in the dough carefully pressing the dough to the walls using your fingers. 
Pierce with a fork and leave the unbaked tart shells in the fridge for 1-2 hours. 

Preheat the oven to 170 C. 
Bake tartlets for 15 minutes. 
While baking them, make the almond cream.


 Almond cream 

100 g butter at room temperature
100 g sugar
100 g almond flour
2 eggs
8 g rhum 

Mix the butter, almond flour and sugar until softened. Add the eggs and rum.
Fill up to 3/4 of tartlets with the almond cream.
Thinly slice the pears and place them on top of the cream.
Bake for another 20-30 minutes or until golden brown.
